Bali is a special area in Indonesia. The majority of thepopulation of Indonesia is Muslim while the island of Bali is dominated byHindus. Bali is not only different and rich in cultural and religious aspects,but they are also special in term of culinary heritage.

As a Hindu, Balinese generally do not consume beef. They do,however, have a lot of other meat-based food to offer. Here are the mostdelicious meat-based foods that can be found in Bali.

In short, lawar is a mixture of vegetables, grated coconut,and minced meat. This mixture is then seasoned with Balinese herbs and spices.In some places, lawar is mixed with fresh blood. Each region has a differentway of cooking lawar.

The meat used in making lawar may varies from one place toanother. Lawar can use chicken, pork, beef, or duck. In some places, youngjackfruit is used instead of meat. Lawar is usually presented in two kinds ofcolors; Red and white.

Bali has a lot of unique satay that cannot be found anywhereelse. The most unique satay in Bali is Sate Lilit, which uses fish meat. Thissatay has a unique shape so it is very easy to distinguish from other satays.

Bali also has many other variants of satay like Sate babithat is made from pork, sate languan that is with tuna, sate kakul (made fromrice snail), and sate susu sapi which is made from cow nipples. Today, variousBali’s original satay are slowly starting to spread throughout Indonesia.

This dish is actually a ceremonial dish which originallyonly served during religious occasions. The cooking process of betutu chickentakes a long time, more than one day in a traditional setting. This dish alsouses a lot of seasonings and spices.

Sambal Matah is sambal that is very popular in Indonesia.Unlike most other sambals which is crushed to become paste or sauce, sambalmatah is raw and still retains the ingredients’ original shape. You can seepieces of shallots, lemongrass, ginger torch, chillies, coconut oil, shrimppaste, salt, and lime leaves. All ingredients are fried lightly so that thefreshness is maintained.

Sambal Matah is the ideal complement for shredded chicken ortuna. This food is very spicy, but it is also very popular with Indonesians.

In making babi guling (pork roll), a pig is roastedentirely, from nose to tail. All parts of the pig are rubbed with turmeric. Theinside is stuffed with spice paste made from coriander seeds, lemongrass, limeleaves, bay leaves, garlic, red onion, ginger, kencur, chili, and pepper.
